Luncheonette: Market Spotlight on Herbanfarm Pike Place Market serves as an incubator for many small food businesses and farmers who work year round out of the daystalls along the Arcade and lined along the cobblestones. Join Chef Traci for the Luncheonette: Market Spotlight lunch and cooking class to learn more about the artisan and hand-crafted culinary ingredients available at Pike Place with a custom lunch menu that shines the spotlight on local artisans. Each lunch is accompanied with a demonstration and recipes using the rotating showcased products. Lunch begins promptly on the hour and lasts 45 min—1 hour. Menu featuring Herbanfarm products, prepared by Chef Traci Calderon: fried chicken with Herbanfarm’s “Hot Honey Sauce”, side of coleslaw and biscuit, habanero smoked salmon with Herbanfarm’s “Rainier Rub”, side of potato salad, mussels steamed with Herbanfarm’s “White Bullet Habanero” on a bed of fennel and kale (vegetarian option available), strawberry lemonade and lime-cucumber sparkling water. About Herbanfarm: Founded by Ras Levi Peynado in 2012, Ras was born and raised in Seattle, Washington. Growing up, his mother worked as a craftsperson at the Pike Place Market and eventually became Market Master and Farm Program Manager. His father lived and died in Jamaica where he was a fourth generation farmer and a very humble Rasta man. After a trip to Jamaica, Ras decided to follow in his parents footsteps. In 2010, Ras began growing herbs on an urban farm while developing recipes with his friends and family. Herban Farm grows herbs and peppers on a state licensed urban farm in Seattle. They harvest, dry and process their ingredients by hand using simple yet effective techniques for drying and processing. Their herbs are incorporated into a variety of small batch culinary spice blends, seasonings, sauces, salts, vinegars, mustards and teas.
